FatFree Vegan Kitchen’s Chocolate-Blueberry Cake

In prep for the Hemingway Writing weekend, I landed on making this Chocolate-Blueberry Cake from FatFree Vegan Kitchen’s blog.  As everyone knows, I have a hard time actually following a recipe… but I’m pleased to advise that I did, in fact, follow the directions in making this cake.

Blueberries, water and vinegar whizzing in the blender.

Measuring out the cocoa

Adding in the flax seed meal

All the dry ingredients mixed together

Ready to go into the oven!

Pouring in the blended berries and sweetener

On the cooling rack

And the verdict?  It’s quite good.  In fact, we discussed that it would be the perfect base for a fruit tart even… adding and layering other fruits.  I even think that swapping the syrup on top for a chocolate mango sauce with layered fruit would also be amazing.  The cake itself is a rich chocolate with a subtle blueberry flavor.  Perfect, really.

And there you have it, the Hemingway weekend dessert of choice.
