It isn’t like me to follow the hype of a holiday, or theme my recipes as such, but it just happens that this week’s idea for a quick, easy recipe does fit. Rich in blueberries, pineapple, tomatoes, and cucumbers… you won’t go wrong scooping this into a wrap, or eating with pita, chips or just a spoon.
Blueberry Cucumber Salad
1 cup blueberries
1 large tomato, chopped
1 large cucumber, seeded and chopped
3 slices grilled pineapple (chilled), roughly chopped
1 scallion, chopped
1 jalapeno, seeded and minced
1 teaspoon lemon juice
1/2 teaspoon sea salt
Toss all ingredients together in a large bowl. Let sit up to an hour before serving.
