Many times on Sunday when my attentions are on cooking more than eating (weird, I know, but true), I often turn to a smoothie. They aren’t the best thing in the world to consume regularly, because, let’s face it–chewing your food is optimal since that is where digestion begins–but, in a pinch and with a few leftovers all around from my adventures, I can pretty easily come up with something better than a package of pretzels. And this afternoon was no exception.
I love, love, love the smoothie I made this afternoon. I’ve made variations on this in the past, but today’s blend was just right to power through the rest of making applesauce and other various goodies.
Pumpkin Cookie Smoothie
1 cup unsweetened non-dairy milk (I used soy, but almond would be equally awesome)
1 tablespoon flax seed meal
1 teaspoon cinnamon sugar
1/3 cup pureed pumpkin
1/2 medium peach
1/4 cup oatmeal
dash of each nutmeg and ginger
- In a blender, add all ingredients.
- Whiz until completely smooth.
- Add a little water as needed, if too thick.
